Our Williams pear\noriginates from the sunny regions of western Styria (Austria), where it enjoys\nideal climate conditions. When fully ripe its skin varies from light green to\ncitron yellow, with a reddish patch on the sun-facing side. During the harvesting\nseason each pear is checked on the tree regularly. Only once it has achieved\npeak ripeness does it have the sweet taste we need for making fine pear brandy.\nTo achieve this our grower harvests up to 15 times.<\/p>\n\n\n\n

In order to\nmaintain their fresh fruit flavors, the pears are mashed immediately at\nharvest. <\/p>\n\n\n\n

This mash is then\ntransported to our distillery in Fritzens, where it is gently distilled and\nleft to mature.
